Boats float—sometimes. What makes them float and what makes them sink? How can a boat made of steel float but a solid chunk of steel sink to the bottom of the ocean?

That means that dense liquids sink to the bottom and less dense liquids are left on top. That also explains, at least in part, why balls of modeling clay and rocks sink in water. To end this section, let’s talk about why exactly various liquids have different densities and float on other liquids, and why hot water is less dense than cold water and thus tends to float on top of cold water. Various liquids are composed of different molecules. The molecules in water are relatively small (just an oxygen and two hydrogens), so it’s easy for them to be packed closely together.

When you place the bottle over a heat source, two things happen. One is that the air molecules inside the bottle get hotter and move faster. The other is that some of the water molecules evaporate and become water vapor—an increase in the number of gas molecules inside the bottle. Both things cause the gas pressure inside the bottle to increase. That makes the pressure inside the bottle greater than the pressure outside the bottle, and the balloon gets pushed outward. When you put the bottle in the freezer, again two things happen.
